Albacore Tuna and Artichoke Balsamic Salad
Fresh tasting and easy to make tuna salad.
Ingredients
- 150 g Raincoast Trading Albacore Tuna 1 can, drained
- 2 tsp balsamic vinegar
- 2 Tbsp mayonnaise
- 1 tsp lemon juice
- 1 can (142g /14oz) artichokes drained
- 2 medium green onions sliced
- 2 Tbsp pitted black olives sliced
- 3 leaves fresh basil chopped
- 3 fresh or sun-dried tomatoes sliced
- Salt and pepper to taste
- One head butter lettuce or romaine lettuce
Instructions
- In a medium bowl, mix together balsamic vinegar, mayonnaise and lemon juice
- In a separate bowl, flake tuna with a fork
- Cut each artichoke heart into 4 pieces
- Combine ingredients and toss gently
- Add salt & pepper to taste
- Arrange the mixture on a bed of lettuce
